The best bars and Hotels are along the Rio Dulce river, by the Castillo de San Felipe fortress. Even though this is more of a nature trip, you can find excellent bars at El Corozal Hotel (Deluxe) just past the Castillo de San Felipe fortress; recommended.  Also nearby is the Catamarán with wonderful bar service (Deluxe). Turicentro Marimonte offers similar services. The clientele of this area include the rich Guatemalans and the American yachting types of people. The Hollymar Bar (Budget) at El Relleno is good, recommended.
